:carbohydrate)比の異なる食物を,異なる日の朝食として健常者(n=7)が摂取し,食後の空腹感と血中脂肪酸・アミノ酸濃度の変化を調べた。その結果,食前は3回とも空腹感が強かったが,食後に満腹感を強く感じたのは蛋白食で,ついで脂質食であり,両食後5時間を過ぎても食前と比較して空腹感が強くはなかった。炭水化物食摂取5時間後は空腹感が強く耐えられない者が多かった。満腹感と有意の正相関を示したのは血清トリグリセリドとインスリン濃度であり,負相関があったのは血清総タンパク濃度だった。血漿アミノ酸は,蛋白食後に必須アミノ酸(EAA)が有意に上昇し,それとともに満腹感が増強する傾向にあり,EAAのすべてと満腹感,特に分枝鎖アミノ酸のLeu,Ile,Val や芳香族アミノ酸のPhe ,Tyr
